Baked sweet potato fries and spicy mayo dip – the perfect combo to complete any lunch! Read along for the recipe.
We experienced a crazy ice storm in Toronto this weekend…right when we thought spring was supposed to pop around the corner! With the terrible weather there was basically no way I was walking to the grocery store to get food…so I had to get resourceful!! I’ve talked about it here before, but I really thrive in the kitchen when I have very limited resources – I love a good culinary challenge! Believe it or not, with what I would typically open my fridge to say ‘ugh I have no food’, I managed to make 3 very delicious meals and even a dessert (4 cookies with my last bit of butter and leftover Easter chocolate bunny… hah!) while cooped up over the weekend. These baked sweet potato fries were part of Saturday’s breakfast and when they turned out SO well I had to photograph them and share them here – along with the spicy mayo dip which is seriously damn delicious.
Baked Sweet Potato Fries & Spicy Mayo Dip - A delicious side dish for breakfast, lunch, or dinner!
Cut our sweet potato into long slivers about 1/4" around and as long as the potato. Heat oven to 400.
Coat the sweet potato fingers in olive oil, salt, pepper, and your choice of spices - I kept it simple with just paprika
Lay the sweet potatoes on a lined baking sheet and place in the warmed oven. After baking for about 10 minutes, remove the pan from the oven and turn all the fries to bake the other side. Place back in the oven for another 10-15 minutes. At the end of the time, if any fries still have a shiny and unbaked looking surface leave them in for an additional few minutes.
Combine all ingredients in a small bowl and stir until fully combined.
