Today I am sharing a mango salad recipe. It’s simple, healthy, and delicious!
Salads are my go-to working from home lunch. They’re quick and easy, healthy, and I like getting creative with whatever I have in the fridge. The other day I was craving a mango salad. I’ve always loved mango salad but funnily it’s a menu item that I had only ever had while eating out and it never really occurred to me to try making it at home. Well, on this day my craving was in full force and it barely seemed worth it to order in Thai food just for that. Lucky for me I had everything I needed to make one in my fridge. And guess what?! It turned out pretty darn well! As it turns out, mango salad isn’t very difficult to make. It has become a lunch time staple over here so I wanted to share my recipe here with you!
Perfect fresh salad to enjoy as a starter or for a quick and simple lunch!
Very thinly slice your mango, pepper, and onion in long slices and combine in a bowl.
Small chop your cilantro and chop the peanuts. Add to the salad.
In a separate small bowl, combine the ingredients for your salad dressing.
Toss your mango salad with the dressing. If you have the time, allow to sit for half an hour before eating for flavours to combine.
