Try This Breakfast: Chia Pudding & Apple Parfait

This blog post shares how to make and overnight chia pudding recipe with baked oatmeal and apple compote. Chia pudding is a healthy and delicious breakfast.

Overnight Chia Pudding Parfait with Baked Oatmeal and Apple Compote

How Do You Feel About Breakfast? This Chia Pudding Recipe May Change Things…

I have such a difficult time with breakfast. I know it’s important. Even the most important meal of the day I’m told, but I just can’t find the timeΒ (or rather, make the time) for it! On top of not having time, I’ve also never really found a breakfast food that I love. Recently, a friend of mine suggested that I try overnight oats. This sounded like a great idea because that meant that there was minimal prep to take on in the morning. Ok, I am not going to say I am a breakfast loving convert now, but the idea of overnight oats really is pretty easy!!

So, I took the overnight oats one step further and tried overnight chia pudding after reading about the many health benefits of chia seeds. The final recipe is overnight chia pudding made into a breakfast parfait with layers of a delicious apple compote and vanilla greek yogurt and topped off with some baked oatmeal. Even I can get excited about this breakfast!

Chia Pudding Breakfast Recipe

Chia Pudding Recipe:

1 Serving

– 3 tbsp chia seeds
– 2/3 cup almond milk (or whatever liquid you choose)
– 1/4 tsp vanilla extract
– 1/4 tsp cinnamon

How to Make Overnight Chia Pudding:

Combine the chia seeds with the rest of the ingredients listed above in a fully sealed container and store in the fridge overnight to soak. Chia needs to soak for at least a couple of hours before it can be eaten. Making this overnight chia pudding before bed will ensure your breakfast is perfect in the morning!

Apple Compote Recipe:

4 servings

– 4 apples (I used Fuji)
– 1 tsp cinnamon
– 1 tsp vanilla extract
– 1/2 cup water

How to Make Apple Compote

Combine all of the above ingredients in a saucepan until the apples are soft. Add more water if necessary and feel free to add 1 tbsp of honey if you like things sweet. ( I didn’t find it necessary)

Baked Oatmeal topper:

4 servings

– 1 cup oats
– 2 tbsp coconut oil
– 1 tbsp coconut flakes
– 1 tsp cinnamon

How to Make Baked Oatmeal Topper

Coat oats with other ingredients and bake in the oven on a cookie sheet for 25 mins.

How to Make Your Overnight Chia Pudding Parfait

Make each of these individual dishes the night before and refrigerate separately. In the morning they are ready to prepare into a parfait! To make the parfait, layer the ingredients beginning with vanilla Greek yogurt on the bottom; then the chia pudding; and then the apple compote. Repeat this layering one more time and top with the baked oatmeal topper. Garnish with pinch of coconut flakes. Enjoy!

    I’ve never seen such lovely photos of a parfait, haha! What type of camera do you use? I can completely relate on the lack of love for breakfast, but I’ve also been trying to prep the night before. I’ve been going a little simpler with boiled eggs, but the nice thing is you can boil 5 of them on Sunday, then you’re prepped for the week!
