Baked Sweet Potato Fries & Spicy Mayo Dip - A delicious side dish for breakfast, lunch, or dinner!

Ingredients
Sweet Potato Fries
  • 2 sweet potatoes
  • 1 tbsp olive oil
  • Large pinch salt
  • 1/4 tsp paprika
  • ground pepper
Spicy Mayo Dip for Sweet Potato Fries
  • 3 tbsp mayonnaise
  • 1/2 tbsp sriracha or any hot sauce
  • 1/2 clove diced garlic
  • 1/2 tsp fresh lemon juice
  • 1/4 tsp paprika
  • pinch salt
Instructions
To Make the Baked Sweet Potato Fries
  1. Cut our sweet potato into long slivers about 1/4" around and as long as the potato. Heat oven to 400. 

  2. Coat the sweet potato fingers in olive oil, salt, pepper, and your choice of spices - I kept it simple with just paprika

  3. Lay the sweet potatoes on a lined baking sheet and place in the warmed oven. After baking for about 10 minutes, remove the pan from the oven and turn all the fries to bake the other side. Place back in the oven for another 10-15 minutes. At the end of the time, if any fries still have a shiny and unbaked looking surface leave them in for an additional few minutes. 

To Make the Spicy Mayo
  1. Combine all ingredients in a small bowl and stir until fully combined.
