3 different flavour options for subtly sweet sparkling iced tea. Perfect for summer!
Boil 4 cups of water and add 6 tea bags. Steep for 3 minutes. Allow to cool and then store in an airtight container in the fridge. This quantity is enough for 16 glasses of iced tea.
Choose just 1 of the above flavour combinations or make up your own. In a small pot, combine the sugar, water, and the fruit/herbs of your choice.
Bring the mixture to a boil to dissolve the sugar and stir occasionally. Once the pot reaches boiling, reduce to a simmer and simmer for 10 minutes.
Using a fine mesh strainer, strain the liquid through and remove the fruit.
Allow your simple syrup to cool and store in an air tight container in the fridge. Since this simple syrup is made using fruit, the shelf life is reduced compared to other simple syrups. Making a one cup batch at a time will allow you to consume it all with your black tea concentrate over the course of a few days.
Fill a cup with ice. Add 1/4 cup of your black tea concentrate and 1-2 tablespoons of the simple syrup depending on your sweetness preference. Top up with sparkling water (I used my SodaStream). Stir to combine.
