The perfect afternoon pick me up on a hot summer day!
First prepare the coffee in your desired method. We actually opted for a coffee concentrate in the ratio of 1:11 coffee grinds to water (25g coffee, 275g water). If that level of precision isn't your thing, I tooootally understand! A regularly prepared coffee will work just fine :)
In a bowl combine all ingredients. Make sure your coffee is cooled first. Use a whisk to fully combine the ingredients. The cocoa powder is the most challenging ingredient to incorporate and the whisking may take a few minutes to dissolve it all!
Once fully combined, pour your mixture into your popsicle molds and place into the freezer until frozen (about 3-4 hours). If you are adding popsicle sticks (instead of toppers that come with the molds) you will need to add the sticks after about an hour and a half of freezing - before the mixture is solid but after it is too liquidy!
