This homemade granola recipe is great to have on hand for breakfast or afternoon snack.
If you’re a long time reader here you will know that I actually quite dislike breakfast. It has always made me feel sick to eat too early in the morning and, as unhealthy as I know it is, I really like to wake up and hit the ground running with my work. That often leaves me forgetting about breakfast until a few hours into my day (coupled with the fact that I realllly didn’t want it until a bit later anyway!).
I’m fortunate to have a work schedule that allows me to break and have breakfast at an unconventional time but if you’re rushing to get to work in the mornings or to pack kids up and off to school, I know how important it is to have a quick and healthy breakfast on hand. Granola is a great thing to have in your cupboard – it is fast to prepare with milk or yogurt and can be packed with healthy and tasty ingredients.
As I am on a current granola kick, in the past 6 weeks I have purchased about 5 different brands of granola and honestly, I have been moderately disappointed in all of them. I’ve had a lot of awesome granolas but I have also had a lot of super ‘meh’ ones (what’s with soft granolas?!). Last weekend Dan and I stayed at our friends Ben and Sophie’s house. They are great cooks and gave us some of their homemade granola for breakfast. Now THAT was a granola I could get behind. Perfectly crunchy and full of good stuff. Inspired by Ben and Sophie, I decided to make my own granola this week too and I’m sharing the delicious recipe here.
Healthy and homemade granola recipe. Can be modified to include your favourite healthy ingredients!
Preheat the oven to 350 degrees. In a bowl, combine the oats, nuts, seeds and salt. Add in your fat (olive oil) and sweetener (maple syrup). Combine fully.
Pour the mixture into a pan to add to the oven. Firmly press the granola mixture onto the pan. I used a spatula to really compact it – this will help your granola bake in chunks and not just individual flakes. Place the granola in the oven to bake until it is slightly crisped and browned – about 25 minutes. Watch carefully as depending on how thick your layer of granola is the baking time will differ.
Remove your granola from the oven and allow it to cool. Toss the granola by breaking up the chunks.
Add your finishing touch ingredients – for me this was the coconut chips (Buddha Brands is the best!) and dried fruit (sliced apricots).
Store in a sealed container and enjoy with yogurt, milk, or whatever you choose!
