Simple Peach Galette and Homemade Pie Crust Recipe
Pie has always been my favourite dessert. Growing up, apple pie was a fall staple. And when I discovered all the other delicious seasonal pies? Well, it was basically game over for me. The amazing thing that I have recently discovered is that pies are actually so easy to make! I am no baker, I have said that before but I’ve tried various pie recipes and they have all worked out…like really well! Now, my love of pie leads me to my new love – galette. I recently read something that referred to to galettes as ‘rustic and honest’. That sounds like the dessert for me.
This week I grabbed my first batch of local peaches for the season and it seemed like the perfect opportunity to finally try making a galette – peach galette. Further to that, if I can make a mini version of something I always will! So, enter here: Mini Peach Galette with Blueberries!
Filling Ingredients (for 3 mini peach galette):
Combine all of the pie filling ingredients in a bowl and mix together thoroughly. Allow to sit for about 20 minutes (while you make and chill the dough). This lets the peach juices combine with the other ingredients.
So many people wonder how to make pie crust. For years I even bought pre-made pie crust because I just assumed it was difficult to make pie crust. Guys, I was silly, making pie crust is so easy!! I have since perfected this pie crust recipe and refer to this blog post every time I make a pie.
Break off 1/3 of your ball of homemade pie crust and roll it out on a floured surface. Using a bowl as your ‘stencil’, place the bowl upside down on the dough and cut around it with a knife. You want the crust form to be around 5″ in diameter. Lay your peach mixture in the middle of the pie crust form, leaving about 1″ around the outside for folding. Once your mixture is in place, fold the 1″ crust around your mixture toward the middle. This doesn’t have to be neat or calculated- whatever gets the job done! Top with a handful of 5-10 blueberries (the softer the better, you can even smush them just a little). Using a baking brush or your fingers (I obviously used my fingers…#nokitchentools) brush the egg over the crust and sprinkle on the coarse sugar.
Place your galettes on a slightly greased baking sheet and cook in the oven at 400°C for 15-20 minutes or until slightly browned on the top. Drizzle on a bit of the brown sugar glaze if your heart desires! Enjoy, these are SO GOOD!
