Perfect fresh salad to enjoy as a starter or for a quick and simple lunch!

Ingredients
Salad
  • 2 mangos not too ripe
  • 1/2 red pepper
  • 1/4 red onion
  • 1/4 cup diced cilantro
  • 3 tbs chopped peanuts
Salad Dressing
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 juiced lime
  • 1 pinch chili flakes
  • 2 tsp granulated or brown sugar
  • salt and pepper to taste
Instructions
  1. Very thinly slice your mango, pepper, and onion in long slices and combine in a bowl.

  2. Small chop your cilantro and chop the peanuts. Add to the salad.

  3. In a separate small bowl, combine the ingredients for your salad dressing.

  4. Toss your mango salad with the dressing. If you have the time, allow to sit for half an hour before eating for flavours to combine.

  5. Enjoy!
