I am definitely a cozy-up-with-a-hot-drink kind of girl. I don’t drink coffee and rarely tea so I am constantly concocting new warm drinks of lemon, ginger, mint, and whatever else strikes me as a good idea at the time. I found this recipe last year when I was hosting a party and it was a definite hit. I’m a ginger lover and this drink has got quite the hot gingery kick – beware!
Ingredients for 4 servings:
– 4 cups pineapple juice
– 1 cup sliced fresh ginger (no need to peel)
– 1 tablespoon honey
– 1 cinnamon stick, split lengthwise
– 8 whole cloves
– 1/4 teaspoon pepper
Combine all the ingredients in a pot or saucepan; bring to a boil. Once boiling, reduce to a simmer for 5- 10 minutes. Serve hot!
This is an easy drink to make in a large quantity if entertaining a bigger group. It’s also easy to reduce the ingredients for a single or double serving like I did. Pour it into your favourite mug; get cozied up; and enjoy!
